Ingredients:
Crust
- 1/4 cup powdered sugar
- 2 cups flour
- 1 cup chilled butter
Filling
- 4 eggs
- 1/3 cup lemon juice
- 1/4 cup flour
- 2 cups sugar
Instructions:
Crust
- Mix flour and powdered sugar
- Grate chilled butter and mix into dry ingredients (DO NOT overmix) I do this part with my hands.
- Press into bottom of 13 x 9 cake pan
- Bake at 350 until golden - about 25 minutes
Filling
- Mix all ingredients and then beat at medium speed until starts to thicken - about 5 minutes
- Pour over baked crust
- Bake at 350 for 25 minutes - or until top begins to brown.
- Sprinkle with powdered sugar - cut and enjoy.
