Ingredients: 

Crust

  • 1/4 cup powdered sugar
  • 2 cups flour
  • 1 cup chilled butter

Filling

  • 4 eggs
  • 1/3 cup lemon juice
  • 1/4 cup flour
  • 2 cups sugar
Instructions: 

Crust

  1. Mix flour and powdered sugar
  2. Grate chilled butter and mix into dry ingredients (DO NOT overmix) I do this part with my hands.
  3. Press into bottom of 13 x 9 cake pan
  4. Bake at 350 until golden - about 25 minutes

Filling

  1. Mix all ingredients and then beat at medium speed until starts to thicken - about 5 minutes
  2. Pour over baked crust
  3. Bake at 350 for 25 minutes - or until top begins to brown.
  4. Sprinkle with powdered sugar - cut and enjoy.
