Ingredients: 
  • 2 cups whole milk or half-n-half

  • 1 tsp vanilla

  • 1/2 cup sugar

  • 3 tablespoons cornstarch

  • dash of salt

  • 4 egg yolks

  • 2 tablespoons butter

Instructions: 
  1. Combine milk and vanilla. Bring to a simmer over medium heat. Remove from heat, cover and let set for 30 minutes.

  2. In a medium bowl combine sugar, cornstarch, and salt. Whisk in egg yolks until mixture is smooth, and fluffy,

  3. While whisking, slowly pour milk into egg yolk mixture.

  4. Cook over medium heat, stirring constantly until begins to thicken, about 5 minutes. Once it thickens, continue to whisk, pausing every few seconds to check for bubbles, about 1 minute. When it begins to bubble, set a timer and continue whisking for 1 minute.

  5. Remove from heat, whisk in butter until melted and thoroughly combined. Refrigerate until cold.

Roxy's Notes: 

I made a Banana Oreo pie with this recipe. I doubled the pastry cream recipe and sliced 2 large bananas into it. For the crust I crushed 2 sleeves of Oreos, mixed with 1/4 cup of melted butter. Pressed into a nine inch pie pan and baked for 7 minutes. It was DELICIOUS!
